Xu xe cake is big day favorite
Xu xe cake, also known as phu the (husband and wife) cake, is made from bot loc (flour), manioc, pasted mung bean and sliced coconut and is a popular gift on special events like Tet holiday or a wedding day. Many people love the cake for its sticky, sweet and delicious smell.
People have to bake the flour to make the thick mixture for the cake’s cover. Then they take out juice from a ripe coconut and scrape its flesh into slices. Mung bean will be steamed and then you add paste. The cake is then wrapped in a coconut leaf or banana leaf for a square shape to be steamed later. An important part is to make the cake’s colors, red (from gac fruit), green (from dua leaf) and yellow (from saffron).
People eat this simple but delicious treat in daily life nowadays and not only at weddings like their ancestors. That’s why the name phu the was gradually replaced byxu xe.
People in the three regions of Vietnam have xu xe in different colors. Central and South residents prefer the green color, while Northern people usually dye it red and yellow to catch the eye of customers.
